This is a fairly easy recipe for grilled salmon that requires only a few ingredients.
Ingredients:
One nice piece of fresh or thawed frozen salmon
3 ounces of olive oil
The juice from one lemon
One teaspoon of lemon zest
Three of four dashes of liquid smoke
Salt and pepper
One or two dashes of soy sauce (optional)
Blend the olive oil, lemon juice, liquid smoke and lemon zest in a small bowl. Get your grill ready, fairly hot, and coat the grate with any type of oil. Baste the top side of your salmon with the marinade. Sprinkle with salt and pepper. Place salmon on the grill face down for two to three minutes or until you have nice grill marks on the salmon. Baste the skin side of your salmon and turn skin down on the grill. Grill another five or six minutes. Baste the top again and turn skin side up. Cook another two to three minutes and your salmon is done. Be sure not to over cook your salmon.
Try this with some long grain and wild rice and your favorite veggie.
